- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) corn, drained
- 1 packet ranch seasoning mix (about 1 oz)
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional: sliced green onions or chopped parsley for garnish
Instructions
- In a large skillet over medium heat, cook ground beef until browned and fully cooked. Drain excess fat if needed.
- Add diced onion and garlic to the skillet. Sauté for 2–3 minutes until softened.
- Stir in corn and ranch seasoning. Cook for 2 more minutes.
- Reduce heat to low. Stir in sour cream until everything is well combined and creamy.
- Sprinkle shredded cheddar cheese over the top. Cover skillet and cook for 2–3 minutes until cheese is melted and bubbly.
- Garnish with green onions or parsley if desired. Serve hot.
Notes
- Great served with rice, mashed potatoes, or over baked potatoes.
