Description

  • 2 large boneless, skinless chicken breasts (halved horizontally to make 4 cutlets)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups Italian-seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup olive oil (for frying)
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley (for garnish)
  • Cooked spaghetti or pasta (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and a mix of breadcrumbs, Parmesan cheese, salt, pepper, and garlic powder in a third.
  3. Dredge each chicken cutlet in flour, then dip in egg, and coat in the breadcrumb mixture. Press to adhere.
  4. Heat olive oil in a large skillet over medium heat. Fry chicken in batches until golden and crispy, about 3–4 minutes per side. Transfer to paper towels to drain.
  5. Place fried chicken cutlets in the prepared baking dish. Spoon marinara sauce evenly over each piece and top with shredded mozzarella.
  6. Bake for 15–20 minutes, or until cheese is melted and bubbly and chicken reaches 165°F (75°C).
  7. Garnish with fresh basil or parsley and serve hot over pasta if desired.

  • For extra crispiness, double-coat the chicken by repeating the breading process.
  • Use fresh mozzarella for a richer melt and flavor.
  • You can air-fry or bake the breaded chicken instead of pan-frying to reduce oil.
