- 2 large eggs, beaten
- 1 1/2 cups Italian-seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup olive oil (for frying)
- 1 1/2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley (for garnish)
- Cooked spaghetti or pasta (optional, for serving)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and a mix of breadcrumbs, Parmesan cheese, salt, pepper, and garlic powder in a third.
- Dredge each chicken cutlet in flour, then dip in egg, and coat in the breadcrumb mixture. Press to adhere.
- Heat olive oil in a large skillet over medium heat. Fry chicken in batches until golden and crispy, about 3–4 minutes per side. Transfer to paper towels to drain.
- Place fried chicken cutlets in the prepared baking dish. Spoon marinara sauce evenly over each piece and top with shredded mozzarella.
- Bake for 15–20 minutes, or until cheese is melted and bubbly and chicken reaches 165°F (75°C).
- Garnish with fresh basil or parsley and serve hot over pasta if desired.

- For extra crispiness, double-coat the chicken by repeating the breading process.
- Use fresh mozzarella for a richer melt and flavor.
- You can air-fry or bake the breaded chicken instead of pan-frying to reduce oil.
