- 500 grams boneless chicken pieces
- 1 cup gluten free flour
- 1/2 cup cornstarch
- 2 large eggs
- 1/2 cup fresh orange juice
- 1 tablespoon orange zest
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 3 tablespoons gluten free soy sauce
- 3 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 1 cup broccoli florets
- 2 cups cooked white rice
Instructions
- Heat oil in a pan over medium high heat until hot.
- In a bowl, mix gluten free flour, cornstarch, salt, and pepper. In another bowl, beat the eggs.
- Dip chicken pieces into eggs, then coat evenly with the flour mixture.
- Fry the coated chicken in batches until golden and crispy, then set aside.
- In the same pan, sauté garlic and ginger, then add orange juice, orange zest, soy sauce, honey, and rice vinegar. Let it simmer until slightly thickened.
- Add the crispy chicken back into the sauce and toss until fully coated.
- Stir in sesame oil and lightly steamed broccoli.
- Serve hot over cooked white rice.
