Description

These gluten-free deep dish pizza bites are mini muffin-sized delights packed with cheesy, saucy goodness and a golden crust. Perfect for parties, snacks, or quick dinners.


Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 2 large eggs
  • ½ cup milk (dairy or plant-based)
  • 2 tablespoons olive oil
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup mini pepperoni or cooked veggies
  • ½ cup marinara sauce
  • 2 tablespoons grated parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. In a bowl, mix flour, baking powder, salt, Italian seasoning, and garlic powder.
  3. In a separate bowl, whisk eggs, milk, and olive oil.
  4. Combine wet and dry ingredients until smooth.
  5. Spoon a tablespoon of dough into each muffin cup, pressing slightly to form a base.
  6. Add a small spoonful of marinara, desired fillings, and top with mozzarella and parmesan.
  7. Bake for 18–22 minutes until cheese is bubbly and edges are golden.
  8. Cool for 5 minutes before removing and serve warm.

Notes

  • Don’t overfill with sauce to avoid soggy bottoms.
  • Brush tops with garlic butter for extra flavor.
  • Store in fridge up to 4 days or freeze for later.
