These gluten-free deep dish pizza bites are mini muffin-sized delights packed with cheesy, saucy goodness and a golden crust. Perfect for parties, snacks, or quick dinners.

- 1 ½ cups gluten-free all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- 2 large eggs
- ½ cup milk (dairy or plant-based)
- 2 tablespoons olive oil
- 1 ½ cups shredded mozzarella cheese
- ½ cup mini pepperoni or cooked veggies
- ½ cup marinara sauce
- 2 tablespoons grated parmesan cheese (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
- In a bowl, mix flour, baking powder, salt, Italian seasoning, and garlic powder.
- In a separate bowl, whisk eggs, milk, and olive oil.
- Combine wet and dry ingredients until smooth.
- Spoon a tablespoon of dough into each muffin cup, pressing slightly to form a base.
- Add a small spoonful of marinara, desired fillings, and top with mozzarella and parmesan.
- Bake for 18–22 minutes until cheese is bubbly and edges are golden.
- Cool for 5 minutes before removing and serve warm.
Notes
- Don’t overfill with sauce to avoid soggy bottoms.
- Brush tops with garlic butter for extra flavor.
- Store in fridge up to 4 days or freeze for later.
