- 2 cups cornflakes, crushed (gluten-free)
- 2 eggs, beaten
- ⅔ cup gluten-free flour blend
- 2 tablespoons avocado oil
- 2 teaspoons yellow mustard
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon pepper
- Avocado oil spray
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper; lightly spray with avocado oil.
- In a small bowl, mix gluten-free flour, salt, garlic powder, onion powder, and pepper.
- In another bowl, whisk eggs with yellow mustard and avocado oil.
- Place crushed cornflakes in a third shallow bowl.
- Coat each chicken tender first in the flour mixture, then dip into the egg mixture, and finally press into the crushed cornflakes until well coated.
- Place coated chicken tenders on the prepared baking sheet and lightly spray tops with avocado oil spray.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165°F/74°C).
- Serve hot with your favorite dipping sauce.
Notes
- For extra crunch, double coat the chicken by repeating the egg and cornflake step.
