Description

Crispy, golden, and gluten-free baked chicken tenders coated with crushed cornflakes and a flavorful seasoning blend, perfect for a healthy family-friendly meal.


Ingredients

  • 1 ½ pounds chicken tenders
  • 2 cups cornflakes, crushed (gluten-free)
  • 2 eggs, beaten
  • ⅔ cup gluten-free flour blend
  • 2 tablespoons avocado oil
  • 2 teaspoons yellow mustard
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon pepper
  • Avocado oil spray

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper; lightly spray with avocado oil.
  2. In a small bowl, mix gluten-free flour, salt, garlic powder, onion powder, and pepper.
  3. In another bowl, whisk eggs with yellow mustard and avocado oil.
  4. Place crushed cornflakes in a third shallow bowl.
  5. Coat each chicken tender first in the flour mixture, then dip into the egg mixture, and finally press into the crushed cornflakes until well coated.
  6. Place coated chicken tenders on the prepared baking sheet and lightly spray tops with avocado oil spray.
  7. Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165°F/74°C).
  8. Serve hot with your favorite dipping sauce.

  • For extra crunch, double coat the chicken by repeating the egg and cornflake step.
