- 1 cup powdered sugar
- 1 tablespoon lemon zest
- 3 tablespoons lemon juice

- 2 large eggs
- 1 teaspoon baking powder
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time. Stir in vanilla extract and lemon zest.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture just until combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are lightly golden. Let them cool slightly on the tray before transferring to a wire rack.
- While cookies are still warm, whisk together powdered sugar and lemon juice to create the glaze. Spoon over the cookies and allow to set.
- Let the glaze firm up before serving or storing.
