Description
Glazed Blueberry Butter Swim Biscuits are ultra-tender, buttery biscuits bursting with juicy blueberries and finished with a sweet vanilla glaze. These easy-to-make biscuits ‘swim’ in melted butter as they bake, resulting in a crisp, golden crust and soft, fluffy interior.
Ingredients
Scale
- 1/2 cup unsalted butter (1 stick), melted
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1 3/4 cups buttermilk
- 1 cup fresh or frozen blueberries (do not thaw if frozen)
- For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 450°F (230°C). Pour the melted butter into an 8×8-inch baking dish.
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Stir in the buttermilk until just combined. Gently fold in the blueberries.
- Pour the biscuit dough into the buttered baking dish and spread evenly. The butter will rise around the dough—that’s expected.
- Use a knife to score the dough into 9 squares (3×3 grid) for easy separation after baking.
- Bake for 25–28 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
- While the biscuits are baking, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
- Let the biscuits cool slightly, then drizzle with the glaze. Serve warm.
Notes
- Use cold buttermilk for the fluffiest biscuits.
- For a lemony twist, add 1 tsp of lemon zest to the dough or the glaze.
- These biscuits are best enjoyed warm, but leftovers can be reheated gently in the oven or microwave.
