Description

A bright, zesty, and quick dinner featuring tender garlic lime shrimp over fluffy rice. Bursting with citrus, herbs, and spice, this recipe is perfect for weeknights or casual gatherings.

Ingredients

Scale
  • 1 pound raw shrimp, peeled and deveined
  • 4 garlic cloves, minced
  • 2 limes, juiced
  • 1 teaspoon lime zest
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 2 cups cooked white rice

Instructions

  1. Heat a skillet over medium-high heat.
  2. In a bowl, toss the shrimp with olive oil, minced garlic, lime juice, lime zest, salt, pepper, and red pepper flakes. Let it marinate for 10 to 15 minutes.
  3. Add a bit of oil to the heated skillet.
  4. Place the shrimp in the skillet in a single layer.
  5. Cook for 2 to 3 minutes per side until the shrimp are pink and cooked through.
  6. Sprinkle chopped cilantro on top and toss gently.
  7. Serve over bowls of warm white rice with lime wedges on the side.

Notes

  • Don’t marinate shrimp for more than 30 minutes to avoid over-curing with lime.
  • Add a touch of honey to the marinade for a sweet-spicy kick.
  • Serve in tacos or lettuce wraps for variety.
  • Use fresh lime juice for best flavor — avoid bottled juice.
