Description

Garlic Herb Roasted Veggies are a simple, wholesome side dish that’s bursting with flavor. Fresh vegetables are tossed in olive oil, garlic, and herbs, then roasted until golden and caramelized. It’s an easy, colorful way to get your veggies and elevate any meal.


Ingredients

  • 2 cups cauliflower florets
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: fresh parsley or grated Parmesan for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, combine all chopped vegetables.
  3. Drizzle with olive oil, then add garlic, Italian seasoning, salt, and pepper. Toss to coat evenly.
  4. Spread the vegetables in a single layer on the prepared baking sheet.
  5. Roast for 25–30 minutes, stirring halfway through, until tender and slightly charred on the edges.
  6. Garnish with fresh parsley or Parmesan if desired, and serve warm.

Notes

  • Cut all veggies into similar-sized pieces for even roasting.
