Garlic Butter Chicken Tikka & Rice is a rich and flavorful dish that combines tender, marinated chicken chunks with a buttery garlic sauce, all served over fragrant rice. It’s an easy weeknight dinner that packs bold Indian-inspired flavors with a comforting twist.

- 500g boneless chicken thighs or breasts, cut into bite-sized pieces
- 150g plain yogurt
- 1 tablespoon lemon juice
- 1 tablespoon ginger-garlic paste
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- Salt to taste
- 2 tablespoons butter
- 4 garlic cloves, minced
- 1 tablespoon fresh coriander, chopped
- For the Rice:
- 1 1/2 cups basmati rice
- 3 cups water or chicken broth
- 1 tablespoon butter or oil
- 1 bay leaf
- 1/2 teaspoon cumin seeds (optional)
- Salt to taste
Instructions
- In a bowl, combine yogurt, lemon juice, ginger-garlic paste, cumin, garam masala, turmeric, paprika, and salt. Add chicken, coat well, and marinate for at least 30 minutes or up to overnight.
- Rinse basmati rice under cold water until clear. In a pot, heat butter/oil and add cumin seeds and bay leaf. Stir in rice, then add water/broth and salt. Bring to a boil, reduce heat, cover, and simmer until rice is tender (about 15 minutes).
- Heat a large skillet or grill pan over medium-high heat. Cook the marinated chicken pieces for 4–5 minutes per side until browned and cooked through. Set aside.
- In the same pan, melt 2 tablespoons butter and sauté minced garlic until fragrant (about 1 minute). Add the cooked chicken back into the pan and toss to coat in the garlic butter. Sprinkle with chopped coriander.
- Serve the garlic butter chicken tikka over the cooked rice. Garnish with additional herbs or lemon wedges if desired.
Notes
- For extra richness, add a splash of cream or coconut milk to the butter sauce.
- Use pre-cooked rice or microwave packs to save time.
- Serve with a side of raita or a fresh cucumber salad.
