- 1 lb ground beef
- 3 cups cooked white rice
- 4 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 small onion, diced
- 1 cup beef broth
- 1 cup frozen peas and carrots
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and cook for another 1 minute until fragrant.
- Add ground beef, season with salt and pepper, and cook until browned, breaking it up with a spoon.
- Drain excess fat if necessary.
- Stir in cooked rice, frozen peas and carrots, and beef broth.
- Reduce heat to low, cover, and simmer for 5-7 minutes until heated through and flavors combine.
- Stir in remaining 2 tablespoons of butter until melted and mixed well.
- Sprinkle with fresh parsley before serving if desired.
Notes
- Use day-old rice for best texture.
- Feel free to add other vegetables like bell peppers or corn.
- For extra flavor, add a splash of soy sauce or Worcestershire sauce.
