Description

  • 2 cloves Garlic, minced
  • 1 cup Cherry Tomatoes, halved
  • 1 can (15 oz) Cannellini Beans, drained and rinsed
  • 1 teaspoon Smoked Paprika
  • Salt and Pepper to taste
  • 2 slices Sourdough Bread, thick-cut
  • 1/4 cup Feta Cheese, crumbled
  • 1 small Avocado, sliced
  • A handful of Fresh Arugula
  • 1 Fried Egg (optional), sunny-side-up or poached
  • A pinch of Chili Flakes (optional)

Instructions

  1. Preheat your grill pan or skillet on medium heat if using for toast.
  2. Heat olive oil in a skillet, add garlic and sauté for 30 seconds until fragrant.
  3. Add cherry tomatoes and cook for about 2 minutes until softened.
  4. Stir in cannellini beans, smoked paprika, salt, and pepper. Cook for 5–7 minutes, stirring occasionally.
  5. While beans are cooking, toast sourdough slices until golden and crispy.
  6. Place toast on plates, layer with arugula, then spoon warm beans over.
  7. Top with crumbled feta, avocado slices, and fried egg if using.
  8. Sprinkle chili flakes for heat, serve immediately.
