Description

A light and tangy French potato salad made with tender potatoes, capers, and a simple vinaigrette, perfect for a fresh and elegant side dish.


Ingredients

  • 800 grams waxy potatoes
  • 2 tablespoons capers
  • 1 small red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. In a small bowl, whisk together olive oil, white wine vinegar, Dijon mustard, salt, and black pepper.
  3. Add the potatoes to the boiling water and cook for 12 to 15 minutes until just tender.
  4. Drain the potatoes, let them cool slightly, then slice them and place in a large bowl with capers, red onion, and parsley.
  5. Pour the dressing over the warm potatoes and gently mix until evenly coated.
  6. Taste and adjust seasoning if needed.
  7. Serve warm or at room temperature.

Notes

  • Dress the potatoes while still warm for better flavor absorption.
