- 800 grams waxy potatoes
- 2 tablespoons capers
- 1 small red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Dijon mustard
- 2 tablespoons white wine vinegar
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- In a small bowl, whisk together olive oil, white wine vinegar, Dijon mustard, salt, and black pepper.
- Add the potatoes to the boiling water and cook for 12 to 15 minutes until just tender.
- Drain the potatoes, let them cool slightly, then slice them and place in a large bowl with capers, red onion, and parsley.
- Pour the dressing over the warm potatoes and gently mix until evenly coated.
- Taste and adjust seasoning if needed.
- Serve warm or at room temperature.
Notes
- Dress the potatoes while still warm for better flavor absorption.
- Do not overcook the potatoes to keep their shape.
- Let the salad rest for 10 minutes before serving for enhanced flavor.
