Description

This French Onion Pasta combines the rich, caramelized flavors of French onion soup with tender farfalle pasta, creamy double cream, and sharp cheddar cheese for a comforting and indulgent dish.


Ingredients

  • 1 large white onion, thinly sliced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 3 tbsp butter
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 sprigs fresh thyme
  • 1 tbsp balsamic vinegar
  • 1 tsp tamari
  • 1 cup white wine
  • 3 tbsp plain flour
  • 1 liter vegetable stock
  • 225g farfalle pasta
  • 60ml double cream
  • 60g mature cheddar cheese, grated

Instructions

  1. Heat olive oil and butter in a large pan over medium heat. Add the sliced onion, season with salt and pepper, and cook slowly until caramelized, about 20-25 minutes.
  2. Add minced garlic and fresh thyme to the onions, cooking for another 1-2 minutes until fragrant.
  3. Stir in balsamic vinegar, tamari, and white wine. Simmer until the wine reduces by half.
  4. Sprinkle the plain flour over the onion mixture and stir well to form a roux. Cook for 1-2 minutes.
  5. Gradually add the vegetable stock, stirring constantly until the sauce is smooth and slightly thickened.
  6. Cook the farfalle pasta according to package instructions until al dente, then drain and add to the sauce.
  7. Stir in double cream and grated cheddar cheese until the pasta is fully coated and creamy.
  8. Adjust seasoning with salt and pepper as needed, then serve immediately, garnished with extra thyme if desired.

Notes

  • For extra depth of flavor, use a mix of white and red onions.
  • Make sure to cook the onions slowly to achieve proper caramelization without burning.
  • Cheddar can be substituted with Gruyère for a more traditional French onion taste.
