  • 3 medium apples, peeled, cored, and sliced into 1-inch thick rounds
  • 3 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered sugar
  • 1 teaspoon lemon juice
  • 2 tablespoons biscuit crumbs or granola
  • Fresh mint (optional)

Instructions

  1. Heat a nonstick skillet over medium heat.
  2. In a bowl, mix mascarpone, vanilla extract, powdered sugar, and lemon juice until smooth. Set aside.
  3. Melt butter in the skillet, then stir in brown sugar and cinnamon.
  4. Add apple slices in a single layer. Cook undisturbed for 4–5 minutes until golden.
  5. Flip apples and cook another 4–5 minutes, basting with caramel.
  6. Remove from heat and plate the apples. Top with mascarpone mixture, biscuit crumbs, and garnish with mint if desired.
