Description

For the Dough

  • 3 cups all-purpose flour
  • 2 1/4 tsp instant yeast (1 packet)
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup warm milk (110°F/45°C)
  • 2 tbsp butter, melted
  • 1 egg

For the Filling

  • 1 lb ground meat (beef, chicken, turkey, or lamb)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Optional: 1/2 cup shredded cheese

For Baking

  • 1 tbsp melted butter (for brushing)
  • Fresh herbs for garnish (optional)

Instructions

  1. Prepare the dough: In a large bowl, whisk together warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.
  2. Add flour, salt, melted butter, and egg. Mix until a dough forms. Knead on a floured surface for 8–10 minutes until smooth and elastic.
  3. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  4. Prepare the filling: In a skillet, heat olive oil over medium heat. Add onion and garlic, cooking until soft. Stir in ground meat, paprika, cumin, salt, and pepper. Cook until browned and fully cooked. Let cool.
  5. Punch down the risen dough and divide into equal portions (about 12 pieces).
  6. Flatten each piece, place a spoonful of filling in the center, and seal into a ball. Repeat with remaining dough and filling.
  7. Arrange filled rolls seam-side down in a greased oven-safe skillet.
  8. Cover and let rise for 20–30 minutes.
  9. Preheat oven to 375°F (190°C). Brush tops with melted butter and bake for 20–25 minutes until golden brown.
  10. Remove from oven, garnish with fresh herbs if desired, and serve warm.
