Description

A vibrant flatbread topped with creamy hummus, roasted vegetables, and tangy feta, perfect as a light meal or appetizer.


Ingredients

  • 2 large flatbreads or naan
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1 small zucchini, sliced into thin rounds
  • 1 small red onion, sliced into wedges
  • 1 small red bell pepper, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or basil, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, oregano, salt, and pepper.
  3. Roast for 20–25 minutes until tender and caramelized.
  4. Warm flatbreads in the oven for 3–5 minutes.
  5. Spread hummus over each flatbread.
  6. Top with roasted vegetables.
  7. Sprinkle with feta and garnish with fresh herbs.
  8. Slice and serve immediately.
