Ingredients

- 2 large flatbreads or naan
- 1 cup hummus
- 1 cup cherry tomatoes, halved
- 1 small zucchini, sliced into thin rounds
- 1 small red onion, sliced into wedges
- 1 small red bell pepper, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley or basil, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss vegetables with olive oil, oregano, salt, and pepper.
- Roast for 20–25 minutes until tender and caramelized.
- Warm flatbreads in the oven for 3–5 minutes.
- Spread hummus over each flatbread.
- Top with roasted vegetables.
- Sprinkle with feta and garnish with fresh herbs.
- Slice and serve immediately.
