Description

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • ½ small red onion, thinly sliced
  • ⅓ cup Kalamata olives, pitted
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Chill your serving bowl in the fridge for a few minutes to keep the salad fresh longer.
  2. In a large mixing bowl, combine cherry tomatoes, cucumber slices, red onion, and Kalamata olives.
  3. In a small bowl or jar, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the vegetables and gently toss to coat.
  5. Top the salad with cubed feta cheese.
  6. Let the salad rest for 10 minutes to allow the flavors to meld.
