Ingredients

- 4 large flour tortillas
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup sour cream
- 1/2 cup guacamole
- 2 tablespoons taco seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat and add olive oil.
- Cook ground beef until browned. Stir in taco seasoning and a splash of water. Simmer until thickened.
- Warm tortillas in a dry pan or microwave.
- On each tortilla, layer rice, beans, beef, cheese, lettuce, tomatoes, sour cream, and guacamole.
- Fold in the sides and roll each burrito tightly.
- Toast wrapped burritos in skillet for 2 minutes per side if desired.
- Slice in half and serve warm.
Notes
- Don’t overfill the tortillas to prevent tearing.
- Use foil to wrap burritos tightly for easy handling.
- To make ahead, store each ingredient separately and assemble before eating.
