- 4 small chicken breasts, skinless and boneless
- 1 tbsp olive oil
- 1 red bell pepper, seeded and cut into strips
- 1 green bell pepper, seeded and cut into strips
- 1 yellow onion, finely chopped
- 1 cup mozzarella, shredded
- Fresh cilantro, chopped (for garnish)
Fajita Seasoning:
- 1 tsp cumin powder
- 1 1/2 tsp chili powder
- 2 tsp garlic powder
- 1 tbsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mix together the fajita seasoning: cumin, chili powder, garlic powder, paprika, salt, and black pepper.
- Rub chicken breasts with olive oil and coat evenly with the fajita seasoning.
- Place the seasoned chicken in a lightly greased casserole dish.
- Scatter bell pepper strips and chopped onion around the chicken.
- Sprinkle shredded mozzarella evenly over the top.
- Bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and cheese is bubbly and golden.
- Remove from the oven and garnish with fresh cilantro before serving.
Notes
- For extra flavor, marinate the chicken in the seasoning mix with a little lime juice for 30 minutes before baking.
- Serve with warm tortillas, rice, or a fresh salad for a complete meal.
- You can swap mozzarella for cheddar or pepper jack for a spicier kick.
