Description

This Fajita Chicken Casserole is a cheesy, flavorful dish that combines tender chicken breasts with bell peppers, onions, and a bold fajita seasoning. Baked with melty mozzarella and topped with fresh cilantro, it’s a quick and satisfying dinner that brings all the flavors of chicken fajitas into one easy casserole.


Ingredients

  • 4 small chicken breasts, skinless and boneless
  • 1 tbsp olive oil
  • 1 red bell pepper, seeded and cut into strips
  • 1 green bell pepper, seeded and cut into strips
  • 1 yellow onion, finely chopped
  • 1 cup mozzarella, shredded
  • Fresh cilantro, chopped (for garnish)

Fajita Seasoning:

  • 1 tsp cumin powder
  • 1 1/2 tsp chili powder
  • 2 tsp garlic powder
  • 1 tbsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix together the fajita seasoning: cumin, chili powder, garlic powder, paprika, salt, and black pepper.
  3. Rub chicken breasts with olive oil and coat evenly with the fajita seasoning.
  4. Place the seasoned chicken in a lightly greased casserole dish.
  5. Scatter bell pepper strips and chopped onion around the chicken.
  6. Sprinkle shredded mozzarella evenly over the top.
  7. Bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and cheese is bubbly and golden.
  8. Remove from the oven and garnish with fresh cilantro before serving.

Notes

  • For extra flavor, marinate the chicken in the seasoning mix with a little lime juice for 30 minutes before baking.
  • Serve with warm tortillas, rice, or a fresh salad for a complete meal.
  • You can swap mozzarella for cheddar or pepper jack for a spicier kick.
  • Leftovers reheat well and can also be used for wraps or quesadillas.
