  • 2 large chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red bell pepper, sliced
  • 1 ripe avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley or cilantro
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh dill or 1 teaspoon dried dill
  • 1 clove garlic, minced

Instructions

  1. Season chicken breasts with olive oil, salt, pepper, and paprika. Grill over medium-high heat for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice.
  2. In a small bowl, mix Greek yogurt, mayonnaise, lemon juice, dill, and minced garlic to create the creamy herb drizzle. Adjust seasoning to taste.
  3. Arrange salad greens on a large platter or in individual bowls. Top with cherry tomatoes, cucumber slices, bell pepper, red onion, and avocado.
  4. Add grilled chicken slices on top and drizzle with the creamy herb dressing.
  5. Garnish with fresh parsley or cilantro and serve immediately.
