- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cloves garlic, minced
- 1.5 lbs baby potatoes, halved
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, mix olive oil, salt, pepper, paprika, thyme, rosemary, and minced garlic.
- Add chicken and potatoes to the bowl, tossing until fully coated in the garlic-herb mixture.
- Arrange chicken and potatoes in a single layer on the prepared baking sheet.
- Roast for 35-40 minutes, turning potatoes halfway through, until chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and crispy.
- Garnish with fresh parsley before serving.
Notes
- For extra crispy potatoes, soak them in cold water for 30 minutes before roasting, then pat dry.
- You can swap dried herbs for fresh ones; just double the quantity for more flavor.
