Ingredients

  • 6 large eggs
  • 12 ounces sausage links, sliced
  • 1 medium yellow onion, whole
  • 3 whole garlic cloves
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped
  • 4 cups water

Instructions

  1. Heat a large pot over medium heat and add the olive oil.
  2. Add the sliced sausage and cook for 3 to 4 minutes until lightly browned.
  3. Pour in the water and add the whole onion, garlic cloves, salt, black pepper, and paprika.
  4. Gently place the eggs into the pot, making sure they are fully submerged.
  5. Bring the pot to a gentle boil, then reduce to a simmer and cook for 10 minutes.
  6. Remove the eggs, peel them carefully, then return them to the pot for 2 more minutes.
  7. Remove from heat, sprinkle with fresh parsley, and serve hot.
