- 12 ounces sausage links, sliced
- 1 medium yellow onion, whole
- 3 whole garlic cloves
- 1 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
- 4 cups water
Instructions
- Heat a large pot over medium heat and add the olive oil.
- Add the sliced sausage and cook for 3 to 4 minutes until lightly browned.
- Pour in the water and add the whole onion, garlic cloves, salt, black pepper, and paprika.
- Gently place the eggs into the pot, making sure they are fully submerged.
- Bring the pot to a gentle boil, then reduce to a simmer and cook for 10 minutes.
- Remove the eggs, peel them carefully, then return them to the pot for 2 more minutes.
- Remove from heat, sprinkle with fresh parsley, and serve hot.
