This Easy Pineapple Upside Down Cake is a classic, retro dessert that features sweet caramelized pineapple rings and cherries over a buttery, moist yellow cake. It’s quick to prepare and always a crowd-pleaser with its beautiful presentation and rich tropical flavor.

- 1/4 cup unsalted butter (melted)
- 1/2 cup packed light brown sugar
- 1 can (20 oz) pineapple slices in juice (drained, reserve juice)
- Maraschino cherries (as needed, usually 6–10)
- 1 box yellow cake mix
- 1 cup pineapple juice (use reserved juice and add water if needed)
- 1/2 cup vegetable oil
- 3 large eggs
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or a 9×13-inch baking dish.
- Pour the melted butter into the bottom of the prepared pan and evenly sprinkle the brown sugar over it.
- Arrange pineapple slices over the brown sugar mixture and place a maraschino cherry in the center of each pineapple ring.
- In a large bowl, mix the cake mix, pineapple juice, oil, and eggs until well combined and smooth.
- Carefully pour the batter over the pineapple and cherries.
- Bake for 40–45 minutes (for round pan) or 30–35 minutes (for 9×13 pan), or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then invert onto a serving plate.
- Allow to cool slightly before serving warm or at room temperature.
Notes
- Serve with whipped cream or a scoop of vanilla ice cream for an extra treat.
- You can substitute the yellow cake mix with a homemade yellow cake if preferred.
- For a richer flavor, add a pinch of cinnamon to the brown sugar topping.
