Description

This Easy Pineapple Upside Down Cake is a classic, retro dessert that features sweet caramelized pineapple rings and cherries over a buttery, moist yellow cake. It’s quick to prepare and always a crowd-pleaser with its beautiful presentation and rich tropical flavor.


Ingredients

  • 1/4 cup unsalted butter (melted)
  • 1/2 cup packed light brown sugar
  • 1 can (20 oz) pineapple slices in juice (drained, reserve juice)
  • Maraschino cherries (as needed, usually 6–10)
  • 1 box yellow cake mix
  • 1 cup pineapple juice (use reserved juice and add water if needed)
  • 1/2 cup vegetable oil
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or a 9×13-inch baking dish.
  2. Pour the melted butter into the bottom of the prepared pan and evenly sprinkle the brown sugar over it.
  3. Arrange pineapple slices over the brown sugar mixture and place a maraschino cherry in the center of each pineapple ring.
  4. In a large bowl, mix the cake mix, pineapple juice, oil, and eggs until well combined and smooth.
  5. Carefully pour the batter over the pineapple and cherries.
  6. Bake for 40–45 minutes (for round pan) or 30–35 minutes (for 9×13 pan), or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for about 10 minutes, then invert onto a serving plate.
  8. Allow to cool slightly before serving warm or at room temperature.

Notes

  • Serve with whipped cream or a scoop of vanilla ice cream for an extra treat.
  • You can substitute the yellow cake mix with a homemade yellow cake if preferred.
  • For a richer flavor, add a pinch of cinnamon to the brown sugar topping.
