- 1 tbsp vegetable oil
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1/4 cup white miso paste
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes or chili paste (adjust to taste)
- 4 cups chicken broth (low sodium)
- 1 cup sliced mushrooms (shiitake or button)
- 2 green onions, sliced (plus extra for garnish)
- 1 tsp sesame oil
- Optional: cooked ramen noodles or steamed rice, bok choy, soft-boiled eggs
Instructions
- Heat vegetable oil in a large pot over medium heat. Add ginger and garlic; sauté for 1 minute until fragrant.
- Add chicken and sear on both sides until lightly browned, about 2–3 minutes per side.
- In a bowl, whisk together miso paste, soy sauce, rice vinegar, and red pepper flakes with a small amount of broth to dissolve.
- Add miso mixture and remaining broth to the pot. Stir to combine.
- Add mushrooms and bring to a simmer. Cover and cook for 15–20 minutes, or until chicken is cooked through and tender.
- Remove chicken, shred or slice, and return to the broth.
- Stir in green onions and sesame oil. Adjust seasoning if needed.
- Serve hot over noodles or rice, topped with extra green onions and optional garnishes like bok choy or soft-boiled egg.
