Description

Easy Miso-Ginger Chicken with Spicy Broth is a comforting and flavorful dish featuring tender chicken simmered in a rich, umami-packed miso broth infused with fresh ginger, garlic, and a touch of heat. It’s perfect for chilly nights and can be served with noodles or rice for a complete meal.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 tbsp vegetable oil
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1/4 cup white miso paste
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1/2 tsp red pepper flakes or chili paste (adjust to taste)
  • 4 cups chicken broth (low sodium)
  • 1 cup sliced mushrooms (shiitake or button)
  • 2 green onions, sliced (plus extra for garnish)
  • 1 tsp sesame oil
  • Optional: cooked ramen noodles or steamed rice, bok choy, soft-boiled eggs

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add ginger and garlic; sauté for 1 minute until fragrant.
  2. Add chicken and sear on both sides until lightly browned, about 2–3 minutes per side.
  3. In a bowl, whisk together miso paste, soy sauce, rice vinegar, and red pepper flakes with a small amount of broth to dissolve.
  4. Add miso mixture and remaining broth to the pot. Stir to combine.
  5. Add mushrooms and bring to a simmer. Cover and cook for 15–20 minutes, or until chicken is cooked through and tender.
  6. Remove chicken, shred or slice, and return to the broth.
  7. Stir in green onions and sesame oil. Adjust seasoning if needed.
  8. Serve hot over noodles or rice, topped with extra green onions and optional garnishes like bok choy or soft-boiled egg.

Notes

  • Use low-sodium broth and soy sauce to control saltiness.
  • For a vegetarian version, substitute tofu and vegetable broth.
