- 700 grams boneless skinless chicken thighs, cut into bite sized pieces
- 120 grams plain full fat yogurt
- 15 milliliters fresh lemon juice
- 2 teaspoons garam masala, divided
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 0.5 teaspoon turmeric
- 1.5 teaspoons salt, divided
- 0.5 teaspoon black pepper
- 45 grams unsalted butter, divided
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 400 grams tomato puree
- 120 milliliters heavy cream
- 1 teaspoon sugar
- 2 tablespoons fresh cilantro, chopped
Instructions
- In a mixing bowl, combine chicken, yogurt, lemon juice, 1 teaspoon garam masala, ground cumin, ground coriander, paprika, turmeric, 1 teaspoon salt, and black pepper. Mix well and marinate for at least 30 minutes.
- Heat a large skillet over medium heat and melt 30 grams of butter. Add chopped onion and cook for 6 to 8 minutes until soft and golden.
- Stir in minced garlic and grated ginger and cook for 1 minute until fragrant.
- Add tomato puree, remaining 1 teaspoon garam masala, remaining 0.5 teaspoon salt, and sugar. Simmer for 10 minutes until slightly thickened.
- Add the marinated chicken along with the marinade to the skillet. Cook for 12 to 15 minutes, stirring occasionally, until the chicken is fully cooked and tender.
- Stir in heavy cream and the remaining 15 grams of butter. Simmer gently for 5 minutes until the sauce becomes silky and glossy.
- Garnish with chopped fresh cilantro and serve hot.
Notes
- For deeper flavor, marinate the chicken for up to 4 hours in the refrigerator.
- Keep the heat low after adding cream to prevent the sauce from separating.
- Leftovers taste even better the next day as the flavors continue to develop.
