Description

A creamy, comforting Indian-inspired chicken dish simmered in a rich tomato butter sauce with warm spices and finished with cream for a silky texture.

  • 700 grams boneless skinless chicken thighs, cut into bite sized pieces
  • 120 grams plain full fat yogurt
  • 15 milliliters fresh lemon juice
  • 2 teaspoons garam masala, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.5 teaspoon turmeric
  • 1.5 teaspoons salt, divided
  • 0.5 teaspoon black pepper
  • 45 grams unsalted butter, divided
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 400 grams tomato puree
  • 120 milliliters heavy cream
  • 1 teaspoon sugar
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a mixing bowl, combine chicken, yogurt, lemon juice, 1 teaspoon garam masala, ground cumin, ground coriander, paprika, turmeric, 1 teaspoon salt, and black pepper. Mix well and marinate for at least 30 minutes.
  2. Heat a large skillet over medium heat and melt 30 grams of butter. Add chopped onion and cook for 6 to 8 minutes until soft and golden.
  3. Stir in minced garlic and grated ginger and cook for 1 minute until fragrant.
  4. Add tomato puree, remaining 1 teaspoon garam masala, remaining 0.5 teaspoon salt, and sugar. Simmer for 10 minutes until slightly thickened.
  5. Add the marinated chicken along with the marinade to the skillet. Cook for 12 to 15 minutes, stirring occasionally, until the chicken is fully cooked and tender.
  6. Stir in heavy cream and the remaining 15 grams of butter. Simmer gently for 5 minutes until the sauce becomes silky and glossy.
  7. Garnish with chopped fresh cilantro and serve hot.

Notes

  • For deeper flavor, marinate the chicken for up to 4 hours in the refrigerator.
  • Keep the heat low after adding cream to prevent the sauce from separating.
  • Leftovers taste even better the next day as the flavors continue to develop.
