- 2 lbs (900 g) beef sirloin, ribeye, or flank steak
- 1 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 4 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp lemon juice (optional)
Instructions
- Pat the steak dry with paper towels, then season generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over high heat until hot.
- Sear the steak for 3-4 minutes per side (for medium-rare) or until your desired doneness is reached. Transfer the steak to a plate and let it rest.
- In the same skillet, reduce heat to medium, add butter and let it melt.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add chopped parsley and lemon juice (if using), stirring to combine.
- Return the steak to the skillet and spoon the garlic butter over it.
- Slice the steak against the grain, drizzle with more garlic butter, and serve immediately.
Notes
- For extra flavor, marinate the steak with olive oil, garlic, and herbs for at least 30 minutes before cooking.
- Use a meat thermometer to ensure your preferred doneness: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
