Description

This Easy Date and Nut Cake is a moist and flavorful dessert packed with sweet dates and crunchy nuts. Perfect for any occasion, it’s simple to make and pairs wonderfully with a cup of tea or coffee.


Ingredients

  • 1 1/2 cups chopped dates
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a bowl, combine chopped dates, boiling water, and baking soda. Let sit for 15 minutes to soften the dates.
  3. In a separate bowl, cream butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually add flour, baking powder, and salt to the butter mixture, mixing well.
  6. Stir in the date mixture (including liquid) and chopped nuts until combined.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For added moisture, serve with a dollop of whipped cream or cream cheese frosting.
  • Use chopped dried figs or raisins as a substitute for dates if preferred.
