Description

Easy Chicken Cobbler Dinner Casserole is a savory, comforting meal made with shredded chicken, vegetables, creamy soup, and a golden biscuit topping. It’s a fuss-free, hearty dish perfect for busy weeknights or family dinners.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie works great)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/2 cup butter (1 stick), melted
  • 1 cup Bisquick or baking mix
  • 1 cup milk
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried thyme (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Spread shredded chicken evenly across the bottom of the dish. Top with frozen mixed vegetables.
  3. In a separate bowl, whisk together Bisquick mix and milk until smooth. Pour gently over the chicken and vegetables without stirring.
  4. In another bowl, combine melted butter, cream of chicken soup, chicken broth, garlic powder, pepper, and thyme. Mix until smooth.
  5. Pour the soup mixture evenly over the top. Do not stir.
  6. Bake uncovered for 45–50 minutes, or until the top is golden brown and the filling is bubbly.
  7. Let rest for 5–10 minutes before serving to allow it to set slightly.

Notes

  • For extra flavor, add shredded cheese between the layers.
  • Fresh veggies can be used in place of frozen—lightly sauté first for better texture.
  • Use leftover turkey as a delicious alternative to chicken.
  • This dish can be made ahead and refrigerated before baking (add 10 extra minutes to bake time).
