- 1/2 cup unsalted butter, softened to room temperature
- 1 large egg, room temperature
- 1/2 cup full-fat sour cream, room temperature
- 2 teaspoons pure vanilla extract
- 2/3 cup whole milk, room temperature
- 1/3 cup rainbow sprinkles (jimmies, not nonpareils)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Prepare the crumb topping: In a medium bowl, combine flour, sugar, baking powder, salt, and vanilla extract. Stir in melted butter until mixture is crumbly. Fold in 3 tablespoons sprinkles and set aside.
- Prepare the cake batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, cream the butter until smooth. Beat in the egg, sour cream, and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
- Fold in 1/3 cup sprinkles.
- Pour the batter into the prepared pan and smooth the top.
- Sprinkle the Funfetti crumb topping evenly over the cake batter.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan before slicing and serving.
