  • 1/4 teaspoon baking soda
  • 1/2 teaspoon Kosher or sea salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 large egg, room temperature
  • 1/2 cup full-fat sour cream, room temperature
  • 2 teaspoons pure vanilla extract
  • 2/3 cup whole milk, room temperature
  • 1/3 cup rainbow sprinkles (jimmies, not nonpareils)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Prepare the crumb topping: In a medium bowl, combine flour, sugar, baking powder, salt, and vanilla extract. Stir in melted butter until mixture is crumbly. Fold in 3 tablespoons sprinkles and set aside.
  3. Prepare the cake batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, cream the butter until smooth. Beat in the egg, sour cream, and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
  6. Fold in 1/3 cup sprinkles.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Sprinkle the Funfetti crumb topping evenly over the cake batter.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
