Description

These Dill Pickle Cheeseburger Mozzarella Bombs are a fun, cheesy twist on a classic burger. Juicy ground beef, tangy pickles, and gooey mozzarella are wrapped in soft dough and baked until golden brown—perfect as a party appetizer or a savory snack!


Ingredients

  • 1 lb ground beef
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 1/2 cup chopped dill pickles
  • 1 can refrigerated biscuit dough (8 biscuits)
  • 8 mozzarella cheese cubes
  • 1 tbsp melted butter
  • 1 tsp sesame seeds (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook ground beef with garlic powder, onion powder, salt, and pepper until browned. Drain excess fat.
  3. Stir in ketchup, mustard, and chopped dill pickles. Cook for 1–2 minutes, then remove from heat and let cool slightly.
  4. Flatten each biscuit into a 3-4 inch circle. Place a spoonful of the beef mixture and a cube of mozzarella in the center of each.
  5. Wrap the dough around the filling and pinch to seal completely, forming a ball.
  6. Place seam-side down on the prepared baking sheet. Brush tops with melted butter and sprinkle with sesame seeds if using.
  7. Bake for 15–18 minutes, or until golden brown and cooked through.
  8. Serve warm with extra pickles or dipping sauce if desired.

Notes

  • Use dill pickle relish for more tang throughout the filling.
  • Shredded cheese can be used in place of cubes if needed.
  • Great for freezing—reheat in the oven for best texture.
