These Dill Pickle Cheeseburger Mozzarella Bombs are a fun, cheesy twist on a classic burger. Juicy ground beef, tangy pickles, and gooey mozzarella are wrapped in soft dough and baked until golden brown—perfect as a party appetizer or a savory snack!

- 1 lb ground beef
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/4 cup ketchup
- 1 tbsp yellow mustard
- 1/2 cup chopped dill pickles
- 1 can refrigerated biscuit dough (8 biscuits)
- 8 mozzarella cheese cubes
- 1 tbsp melted butter
- 1 tsp sesame seeds (optional)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, cook ground beef with garlic powder, onion powder, salt, and pepper until browned. Drain excess fat.
- Stir in ketchup, mustard, and chopped dill pickles. Cook for 1–2 minutes, then remove from heat and let cool slightly.
- Flatten each biscuit into a 3-4 inch circle. Place a spoonful of the beef mixture and a cube of mozzarella in the center of each.
- Wrap the dough around the filling and pinch to seal completely, forming a ball.
- Place seam-side down on the prepared baking sheet. Brush tops with melted butter and sprinkle with sesame seeds if using.
- Bake for 15–18 minutes, or until golden brown and cooked through.
- Serve warm with extra pickles or dipping sauce if desired.
Notes
- Use dill pickle relish for more tang throughout the filling.
- Shredded cheese can be used in place of cubes if needed.
- Great for freezing—reheat in the oven for best texture.
