A rich and indulgent chocolate cake layered with fresh strawberries and luscious chocolate ganache, perfect for special occasions or any time you crave a show-stopping dessert.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup hot coffee
- 2 cups fresh strawberries, sliced
- Chocolate Ganache: 8 oz semi-sweet chocolate, 1 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, oil, eggs, and vanilla. Gradually mix into the dry ingredients.
- Stir in the hot coffee until batter is smooth (it will be thin).
- Divide the batter evenly between the cake pans and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.
- For the ganache, heat heavy cream until simmering, pour over chocolate, and let sit for 5 minutes. Stir until smooth and glossy. Cool slightly until spreadable.
- To assemble, place one cake layer on a plate, spread a layer of ganache and top with sliced strawberries. Place the second cake layer on top and cover the cake with the remaining ganache.
- Garnish with extra strawberries on top before serving.
Notes
- You can substitute raspberries or cherries for strawberries for a different flavor.
- Refrigerate the cake if not serving immediately, but bring to room temperature before slicing.
- For an extra decadent touch, add a layer of whipped cream with the strawberries.
