Description

A rich and indulgent chocolate cake layered with fresh strawberries and luscious chocolate ganache, perfect for special occasions or any time you crave a show-stopping dessert.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot coffee
  • 2 cups fresh strawberries, sliced
  • Chocolate Ganache: 8 oz semi-sweet chocolate, 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, oil, eggs, and vanilla. Gradually mix into the dry ingredients.
  4. Stir in the hot coffee until batter is smooth (it will be thin).
  5. Divide the batter evenly between the cake pans and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.
  6. For the ganache, heat heavy cream until simmering, pour over chocolate, and let sit for 5 minutes. Stir until smooth and glossy. Cool slightly until spreadable.
  7. To assemble, place one cake layer on a plate, spread a layer of ganache and top with sliced strawberries. Place the second cake layer on top and cover the cake with the remaining ganache.
  8. Garnish with extra strawberries on top before serving.

Notes

  • You can substitute raspberries or cherries for strawberries for a different flavor.
  • Refrigerate the cake if not serving immediately, but bring to room temperature before slicing.
  • For an extra decadent touch, add a layer of whipped cream with the strawberries.
