Decadent and moist muffins combining rich dark chocolate, creamy pistachio-infused cream cheese, and crunchy pistachio nuts. These bakery-style treats are perfect for breakfast, brunch, or dessert.

- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 3/4 cup buttermilk (or milk + 1 tsp vinegar)
- 1/2 cup dark chocolate chips or chunks
- 1/2 cup shelled pistachios, roughly chopped
- For the Pistachio Cream Cheese Swirl:
- 4 oz cream cheese, softened
- 2 tbsp pistachio butter (or finely ground pistachios)
- 2 tbsp powdered sugar
- 1/4 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk the sugars, oil, eggs, vanilla, and buttermilk until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in chocolate chips and chopped pistachios.
- In a small bowl, beat together cream cheese, pistachio butter, powdered sugar, and vanilla until smooth.
- Spoon muffin batter into liners, filling about 2/3 full. Drop a small spoonful of the pistachio cream cheese mixture on top of each and swirl with a toothpick or knife.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use high-quality dark chocolate for the best flavor.
- You can substitute pistachio butter with almond butter or omit the swirl for a simpler version.
- Store in an airtight container for up to 3 days or freeze for longer storage.
