Description

Ingredients

  • 2 tbsp peanut butter (smooth or crunchy)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp sesame oil
  • 12 tsp sriracha or chili garlic sauce (adjust to taste)
  • 1 tsp honey or maple syrup
  • 1 garlic clove, minced
  • 12 tbsp water (to thin the sauce)
  • 1 tbsp chopped roasted peanuts (for garnish)
  • 1 tsp sesame seeds (optional garnish)
  • Fresh cilantro or green onions, chopped (optional garnish)

Instructions

  1. In a small bowl, whisk together peanut butter, soy sauce, vinegar or lime juice, sesame oil, sriracha, honey, and garlic until smooth.
  2. Thin the sauce with 1–2 tablespoons of water until it reaches a pourable consistency.
  3. Place sliced cucumbers in a large bowl and toss with the peanut sauce until well coated.
  4. Transfer to a serving dish and top with chopped peanuts, sesame seeds, and herbs if using.
  5. Serve immediately for crunch, or chill for 10–15 minutes to let flavors meld.

Notes

  • For extra crunch, salt cucumbers and let them sit for 10 minutes, then pat dry before dressing.
  • Can be made ahead—just store sauce and cucumbers separately until ready to serve.
  • Add shredded carrots or sliced radish for more texture and color.
  • To make it spicier, add a pinch of crushed red pepper or extra sriracha.
