- 1 tsp honey or maple syrup
- 1 garlic clove, minced
- 1–2 tbsp water (to thin the sauce)
- 1 tbsp chopped roasted peanuts (for garnish)
- 1 tsp sesame seeds (optional garnish)
- Fresh cilantro or green onions, chopped (optional garnish)
Instructions
- In a small bowl, whisk together peanut butter, soy sauce, vinegar or lime juice, sesame oil, sriracha, honey, and garlic until smooth.
- Thin the sauce with 1–2 tablespoons of water until it reaches a pourable consistency.
- Place sliced cucumbers in a large bowl and toss with the peanut sauce until well coated.
- Transfer to a serving dish and top with chopped peanuts, sesame seeds, and herbs if using.
- Serve immediately for crunch, or chill for 10–15 minutes to let flavors meld.
Notes
- For extra crunch, salt cucumbers and let them sit for 10 minutes, then pat dry before dressing.
- Can be made ahead—just store sauce and cucumbers separately until ready to serve.
- Add shredded carrots or sliced radish for more texture and color.
- To make it spicier, add a pinch of crushed red pepper or extra sriracha.
