- 4 large eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup pizza sauce
- 1/2 cup diced pepperoni or cooked sausage
- 1/2 cup diced bell peppers
- 1/4 cup sliced black olives
- 1/4 cup chopped onions
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a large bowl, whisk the eggs until smooth.
- Stir in pizza sauce, mozzarella cheese, pepperoni, bell peppers, olives, onions, Italian seasoning, salt, and pepper.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 20-25 minutes or until the eggs are set and the top is golden.
- Remove from oven, let cool slightly, garnish with fresh herbs, and serve warm.
