Description

This Crunchy Spicy Chicken Salad is a bold and refreshing dish featuring tender chicken, crisp vegetables, and a spicy, tangy dressing — perfect for lunch or a light dinner.


Ingredients

  • 2 cooked chicken breasts, shredded or chopped
  • 2 cups shredded cabbage (green or purple)
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted peanuts or cashews (optional)
  • For the Spicy Dressing:
  • 3 tbsp mayonnaise or Greek yogurt
  • 1 tbsp sriracha or hot sauce (adjust to taste)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp honey or maple syrup
  • 1 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine shredded chicken, cabbage, carrots, bell pepper, cucumber, green onions, and cilantro.
  2. In a separate bowl, whisk together all the dressing ingredients until smooth.
  3. Pour the dressing over the salad and toss until evenly coated.
