- 2 green onions, chopped

- 1/4 cup roasted peanuts or cashews (optional)
- For the Spicy Dressing:
- 3 tbsp mayonnaise or Greek yogurt
- 1 tbsp sriracha or hot sauce (adjust to taste)
- 1 tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
- 1 tsp honey or maple syrup
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine shredded chicken, cabbage, carrots, bell pepper, cucumber, green onions, and cilantro.
- In a separate bowl, whisk together all the dressing ingredients until smooth.
- Pour the dressing over the salad and toss until evenly coated.
- Top with roasted peanuts or cashews if using.
