- 1/2 cup butter
- 1 cup brown sugar
- 3 cups cornflakes cereal (or similar crunchy cereal)
- 1/2 cup chopped pecans or walnuts
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 gallon vanilla ice cream (slightly softened)
Instructions
- In a large skillet over medium heat, melt the butter. Add brown sugar and stir until the mixture starts to bubble and caramelize.
- Stir in the cornflakes, nuts, and cinnamon (if using). Cook, stirring frequently, for about 2–3 minutes until coated and golden. Remove from heat and let cool slightly.
- Spread half of the crunchy mixture into the bottom of a 9×13-inch pan and gently press to form a crust layer.
- Spread the softened vanilla ice cream evenly over the crust.
- Top with the remaining crunchy cereal mixture, pressing lightly.
- Cover and freeze for at least 4 hours or until firm.
- Cut into squares and serve cold.

- Use any flavor of ice cream to switch up the taste—try chocolate, caramel, or strawberry for fun variations.
- Store covered in the freezer for up to 1 week.
