Description

Crunchy Croissant, Cornbread & Sausage Dressing is a rich and savory twist on classic stuffing. This holiday favorite combines flaky croissants, sweet cornbread, and spicy sausage with herbs and aromatics, baked to golden, crunchy perfection.

Ingredients

Scale
  • 4 croissants, torn into bite-sized pieces
  • 3 cups cornbread, crumbled
  • 1 lb (450g) sausage (mild or spicy), casing removed
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1 1/2 cups chicken or vegetable broth
  • 2 large eggs
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
  2. Spread torn croissant pieces and cornbread crumbles on a baking sheet and toast in the oven for 10–12 minutes, until lightly golden. Let cool.
  3. In a large skillet, cook sausage over medium heat, breaking it up as it browns. Once cooked through, transfer to a large bowl.
  4. In the same skillet, melt butter and sauté onion, celery, and garlic until soft, about 5–7 minutes.
  5. Add the sautéed vegetables, toasted croissants, and cornbread to the bowl with the sausage. Mix in sage, thyme, salt, and pepper.
  6. In a small bowl, whisk together eggs and broth. Pour over the stuffing mixture and toss until well combined.
  7. Transfer the mixture to the prepared baking dish and press down gently. Cover with foil and bake for 25 minutes.
  8. Remove foil and bake for an additional 20–25 minutes, or until the top is golden and crunchy.
  9. Garnish with fresh parsley and serve warm.

Notes

  • For a spicier version, use hot Italian sausage.
  • Make the dressing ahead and refrigerate before baking to save time.
  • Use store-bought cornbread or leftover homemade cornbread.
