Crunchy Croissant, Cornbread & Sausage Dressing is a rich and savory twist on classic stuffing. This holiday favorite combines flaky croissants, sweet cornbread, and spicy sausage with herbs and aromatics, baked to golden, crunchy perfection.

- 4 croissants, torn into bite-sized pieces
- 3 cups cornbread, crumbled
- 1 lb (450g) sausage (mild or spicy), casing removed
- 1 medium onion, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- 1 1/2 cups chicken or vegetable broth
- 2 large eggs
- 1 tsp dried sage
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
- Spread torn croissant pieces and cornbread crumbles on a baking sheet and toast in the oven for 10–12 minutes, until lightly golden. Let cool.
- In a large skillet, cook sausage over medium heat, breaking it up as it browns. Once cooked through, transfer to a large bowl.
- In the same skillet, melt butter and sauté onion, celery, and garlic until soft, about 5–7 minutes.
- Add the sautéed vegetables, toasted croissants, and cornbread to the bowl with the sausage. Mix in sage, thyme, salt, and pepper.
- In a small bowl, whisk together eggs and broth. Pour over the stuffing mixture and toss until well combined.
- Transfer the mixture to the prepared baking dish and press down gently. Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 20–25 minutes, or until the top is golden and crunchy.
- Garnish with fresh parsley and serve warm.
Notes
- For a spicier version, use hot Italian sausage.
- Make the dressing ahead and refrigerate before baking to save time.
- Use store-bought cornbread or leftover homemade cornbread.
