CrockPot Tuscan Chicken is a creamy and flavorful slow-cooked dish featuring tender chicken breasts, sun-dried tomatoes, spinach, and Parmesan cheese in a rich garlic cream sauce. Perfect for an easy yet impressive dinner.

- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 2 tablespoons cornstarch (optional, for thickening)
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
- Heat the olive oil in a skillet over medium-high heat and sear the chicken for 2–3 minutes on each side until lightly golden. Transfer to the CrockPot.
- In the same skillet, add garlic and sauté for 1 minute. Stir in chicken broth, heavy cream, Parmesan cheese, and sun-dried tomatoes, scraping up any browned bits. Bring to a simmer.
- Pour the sauce over the chicken in the CrockPot. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours until the chicken is cooked through.
- Stir in the fresh spinach about 5 minutes before serving, allowing it to wilt in the sauce.
- If you prefer a thicker sauce, whisk cornstarch with 2 tablespoons of water and stir it into the sauce 15 minutes before serving.
- Serve the Tuscan chicken with pasta, rice, or crusty bread.

- You can substitute chicken thighs for chicken breasts if preferred.
- Use jarred sun-dried tomatoes packed in oil for best flavor.
