Description

CrockPot Tuscan Chicken is a creamy and flavorful slow-cooked dish featuring tender chicken breasts, sun-dried tomatoes, spinach, and Parmesan cheese in a rich garlic cream sauce. Perfect for an easy yet impressive dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  2. Heat the olive oil in a skillet over medium-high heat and sear the chicken for 2–3 minutes on each side until lightly golden. Transfer to the CrockPot.
  3. In the same skillet, add garlic and sauté for 1 minute. Stir in chicken broth, heavy cream, Parmesan cheese, and sun-dried tomatoes, scraping up any browned bits. Bring to a simmer.
  4. Pour the sauce over the chicken in the CrockPot. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours until the chicken is cooked through.
  5. Stir in the fresh spinach about 5 minutes before serving, allowing it to wilt in the sauce.
  6. If you prefer a thicker sauce, whisk cornstarch with 2 tablespoons of water and stir it into the sauce 15 minutes before serving.
  7. Serve the Tuscan chicken with pasta, rice, or crusty bread.

Notes

  • You can substitute chicken thighs for chicken breasts if preferred.
  • Use jarred sun-dried tomatoes packed in oil for best flavor.
  • This dish pairs beautifully with garlic bread or roasted vegetables.
