- 2 pounds boneless skinless chicken thighs
- 1 cup soy sauce
- 1/4 cup honey
- 1/4 cup brown sugar, packed
- 2 tablespoons rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon sesame oil
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- 3 cups cooked white rice
Instructions
- Turn the slow cooker to low heat to preheat.
- In a mixing bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, garlic, ginger, and sesame oil until fully combined.
- Lightly grease the slow cooker insert if desired.
- Place the chicken thighs in a single layer in the slow cooker and pour the sauce evenly over the top.
- Cover and cook on low for 4 to 5 hours, until the chicken is tender and fully cooked.
- In a small bowl, mix cornstarch and water to form a slurry. Stir it into the slow cooker during the last 30 minutes of cooking and cook uncovered until the sauce thickens.
- Serve the chicken and thickened sauce over warm white rice. Garnish with sliced green onions and sesame seeds.
Notes
- For a slightly less sweet sauce, reduce the honey or brown sugar.
- Fresh ginger provides the best flavor compared to ground ginger.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
