Ingredients
- Ground beef, 2 pounds
- Breadcrumbs, 1 cup
- Milk, 1 cup
- Eggs, 2 large
- Onion, 1 medium finely diced
- Garlic, 2 cloves minced
- Fresh parsley, 2 tablespoons chopped
- Salt, 1 teaspoon
- Black pepper, 1/2 teaspoon
- Ketchup, 1/2 cup
- Brown sugar, 2 tablespoons
- Yellow mustard, 1 tablespoon
- Worcestershire sauce, 2 tablespoons
- Parchment paper, for lining the crockpot
Instructions
- Preheat the crockpot on Low while you prep the ingredients.
- In a large bowl, gently mix ground beef, breadcrumbs, milk, eggs, onion, garlic, parsley, salt, and black pepper until just combined.
- Line the bottom of the crockpot with parchment paper for easy removal.
- Shape the meat mixture into a loaf and place it on the parchment.
- Whisk together ketchup, brown sugar, yellow mustard, and Worcestershire sauce. Spread half of the glaze over the loaf.
- Cover and cook on Low for 6 to 7 hours, or on High for 3 to 4 hours, until the internal temperature reaches 160°F.
- Brush the remaining glaze on top during the last 15 minutes of cooking.
- Lift the meatloaf out using the parchment, rest 10 minutes, slice, and serve.
Notes
- Mix lightly to avoid a dense meatloaf.
- For tidier slices, chill leftovers before slicing.
- For a caramelized finish, broil slices for 2 to 3 minutes after cooking.
