- 2 pounds boneless skinless chicken, cut into large chunks
- 4 cups fresh broccoli florets
- 2 cups shredded cheddar cheese
- 8 ounces cream cheese, softened
- 1 cup low sodium chicken broth
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water (for cornstarch slurry)
Instructions
- Set the crockpot to low heat to begin warming.
- In a mixing bowl, stir together the chicken broth, minced garlic, onion powder, salt, and black pepper.
- Lightly grease the inside of the crockpot to prevent sticking.
- Place the chicken pieces in the crockpot, pour the broth mixture over them, and add the softened cream cheese on top.
- Cover and cook on low for 4 hours, until the chicken is tender and fully cooked.
- In a small bowl, mix the cornstarch with 2 tablespoons of water. Stir this slurry into the crockpot along with the shredded cheddar cheese and broccoli florets.
- Cover and cook for an additional 30 minutes, until the sauce thickens and the broccoli is tender.
- Stir gently to combine everything, then serve warm.
Notes
- Shred your own cheddar for smoother melting and better texture.
- Add broccoli during the final 30 minutes to keep it vibrant and tender.
- Taste before serving and adjust salt if needed.
