Description

Creamy, slow-cooked chicken and broccoli smothered in a rich cheddar cheese sauce, made effortlessly in the crockpot for a comforting and family-friendly dinner.


Ingredients

  • 2 pounds boneless skinless chicken, cut into large chunks
  • 4 cups fresh broccoli florets
  • 2 cups shredded cheddar cheese
  • 8 ounces cream cheese, softened
  • 1 cup low sodium chicken broth
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)

Instructions

  1. Set the crockpot to low heat to begin warming.
  2. In a mixing bowl, stir together the chicken broth, minced garlic, onion powder, salt, and black pepper.
  3. Lightly grease the inside of the crockpot to prevent sticking.
  4. Place the chicken pieces in the crockpot, pour the broth mixture over them, and add the softened cream cheese on top.
  5. Cover and cook on low for 4 hours, until the chicken is tender and fully cooked.
  6. In a small bowl, mix the cornstarch with 2 tablespoons of water. Stir this slurry into the crockpot along with the shredded cheddar cheese and broccoli florets.
  7. Cover and cook for an additional 30 minutes, until the sauce thickens and the broccoli is tender.
  8. Stir gently to combine everything, then serve warm.

Notes

  • Shred your own cheddar for smoother melting and better texture.
  • Add broccoli during the final 30 minutes to keep it vibrant and tender.
  • Taste before serving and adjust salt if needed.
