Description

Crockpot Cherry Cola Pulled Chicken is a sweet and tangy dish made by slow-cooking chicken breasts in cherry cola, barbecue sauce, and spices until tender enough to shred. It’s perfect for sandwiches, sliders, or served over rice.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (12 oz) cherry cola (not diet)
  • 1 cup barbecue sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • Optional: hamburger buns, coleslaw, or pickles for serving

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. In a bowl, whisk together cherry cola, barbecue sauce, apple cider vinegar, brown sugar, garlic powder, onion powder, paprika, salt, and pepper.
  3. Pour the sauce over the chicken in the crockpot, making sure it’s fully coated.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and easily shredded.
  5. Remove the chicken, shred it with two forks, then return it to the sauce. Stir to coat the chicken thoroughly.
  6. Serve on buns with coleslaw or over rice, and enjoy!

Notes

  • Do not use diet soda, as it won’t caramelize properly.
  • This pulled chicken freezes well—store in an airtight container for up to 3 months.
  • Add red pepper flakes or hot sauce for a spicy kick.
  • Use leftover pulled chicken in wraps, quesadillas, or baked potatoes.
