Description
Crockpot Cherry Cola Pulled Chicken is a sweet and tangy dish made by slow-cooking chicken breasts in cherry cola, barbecue sauce, and spices until tender enough to shred. It’s perfect for sandwiches, sliders, or served over rice.
Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts
- 1 can (12 oz) cherry cola (not diet)
- 1 cup barbecue sauce
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper, to taste
- Optional: hamburger buns, coleslaw, or pickles for serving
Instructions
- Place chicken breasts in the bottom of the crockpot.
- In a bowl, whisk together cherry cola, barbecue sauce, apple cider vinegar, brown sugar, garlic powder, onion powder, paprika, salt, and pepper.
- Pour the sauce over the chicken in the crockpot, making sure it’s fully coated.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and easily shredded.
- Remove the chicken, shred it with two forks, then return it to the sauce. Stir to coat the chicken thoroughly.
- Serve on buns with coleslaw or over rice, and enjoy!
Notes
- Do not use diet soda, as it won’t caramelize properly.
- This pulled chicken freezes well—store in an airtight container for up to 3 months.
- Add red pepper flakes or hot sauce for a spicy kick.
- Use leftover pulled chicken in wraps, quesadillas, or baked potatoes.
