- 1 pound mild Italian sausage
- 1 yellow onion, diced (optional)
- 2 pounds baby gold potatoes, thinly sliced
- ½ teaspoon paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- Salt and pepper, to taste
- ½ cup reduced-sodium beef broth
- 2 cups sharp cheddar cheese
- Fresh parsley, optional for garnish
Instructions
- In a skillet over medium heat, cook the Italian sausage and onion until sausage is browned and onion is softened. Drain excess grease.
- Lightly grease the inside of a slow cooker.
- Layer half of the sliced potatoes in the bottom of the crockpot. Sprinkle with paprika, Italian seasoning, garlic powder, salt, and pepper.
- Top with half of the cooked sausage mixture and 1 cup of cheddar cheese.
- Repeat the layers with the remaining potatoes, sausage, and another cup of cheese.
- Pour the beef broth evenly over the layers.
- Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the potatoes are tender and cheese is bubbly.
- Garnish with fresh parsley before serving, if desired.

- For a creamier version, add ½ cup sour cream or heavy cream when layering.
- Try swapping cheddar with mozzarella or pepper jack for a flavor twist.
