- 1 lb Ground Beef (80/20)
- 6 small Flour Tortillas
- 1 cup Cheddar Cheese, shredded
- 1 cup Shredded Lettuce
- 1/2 cup Dill Pickles, sliced
- 1/2 cup Mayonnaise
- 2 tablespoons Ketchup
- 1 tablespoon Yellow Mustard
- 1 tablespoon Sweet Pickle Relish
- 1 teaspoon White Vinegar
- 1/2 teaspoon Garlic Powder
- Salt and Pepper, to taste
- 1 tablespoon Cooking Oil
Instructions
- Heat a cast iron skillet or griddle over medium-high heat with a small amount of oil.
- In a bowl, combine mayonnaise, ketchup, mustard, relish, vinegar, and garlic powder to make the remix sauce. Set aside.
- Prepare beef into 2-ounce balls and set next to your tortillas.
- Place a tortilla on the skillet, top with a beef ball, and smash flat using a spatula or burger press.
- Cook for 3–4 minutes until the beef crisps. Flip, sprinkle with cheese, and cook 1 minute more until melted.
- Remove from pan and top with shredded lettuce, pickles, and remix sauce.
- Serve immediately with extra sauce if desired.
Notes
- Press beef firmly into the tortilla for crisp edges.
- Use freshly grated cheese for the best melt.
- Work in batches to avoid crowding the pan.
- The remix sauce can be made up to 3 days ahead.
