- 2 cups canned salmon, drained and flaked
- 3/4 cup breadcrumbs
- 1 large egg
- 2 green onions, finely chopped
- 1 teaspoon garlic powder
- Zest of 1 lemon
- Salt and pepper, to taste
- Olive oil, for frying
- 1 ripe avocado
- 1/2 cup Greek yogurt
- 2 tablespoons lime juice
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat olive oil in a skillet over medium heat or preheat oven to 400°F (200°C).
- In a large bowl, combine salmon, breadcrumbs, egg, green onions, garlic powder, lemon zest, salt, and pepper.
- If baking, prepare a baking sheet with parchment paper. If frying, prepare a plate lined with paper towels.
- Form tablespoon-sized portions into balls. Chill for 10 minutes if too soft.
- Fry until golden brown on all sides (6–8 minutes) or bake for 15–18 minutes, flipping halfway.
- Mash avocado and mix with Greek yogurt, lime juice, cilantro, and a pinch of salt until creamy.
- Serve salmon balls with the sauce on the side or drizzled on top.
Notes
- Chilling the mixture helps hold the shape while cooking.
- Use panko breadcrumbs for added crunch.
- Add chili flakes to the sauce for extra heat.
