Description

Crispy Parmesan Crusted Zucchini Fries are a golden, cheesy, and irresistibly crunchy way to enjoy zucchini. Perfect as a snack, appetizer, or side dish, they’re baked to perfection and packed with flavor.


Ingredients

  • 2 medium zucchini, cut into sticks
  • 2 large eggs, beaten
  • 3/4 cup grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In one bowl, beat the eggs. In another bowl, mix panko, parmesan, garlic powder, onion powder, salt, and pepper.
  3. Lightly spray your baking sheet with olive oil spray.
  4. Dip each zucchini stick into the egg, then roll in the breadcrumb-parmesan mixture until fully coated.
  5. Place coated zucchini sticks on the baking sheet, spacing them out. Lightly spray tops with olive oil spray.
  6. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  7. Let cool slightly before serving. Sprinkle with extra parmesan if desired.
  8. Serve warm with your favorite dipping sauce.
