Description

Crispy Oven-Baked Quesadillas are a healthier alternative to traditional fried quesadillas. These tortillas are filled with melty cheese and savory fillings, then baked to golden perfection for a crispy and satisfying bite.


Ingredients

  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked chicken, shredded (optional)
  • 1/2 cup black beans, drained and rinsed (optional)
  • 1/4 cup diced bell pepper
  • 1/4 cup diced red onion
  • 1 tablespoon olive oil or cooking spray
  • Salt and pepper, to taste
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Lay out four tortillas on the baking sheet. Sprinkle each with a layer of cheddar and mozzarella cheese, followed by optional fillings like chicken, black beans, bell pepper, and red onion. Top with another tortilla to create a sandwich.
  3. Brush the tops of the tortillas with olive oil or spray them with cooking spray. Season with a pinch of salt and pepper.
  4. Bake for 8–10 minutes, flipping halfway through, until the tortillas are golden and crispy and the cheese is melted.
  5. Remove from the oven, cut into wedges, and serve with your choice of sour cream, salsa, or guacamole.

  • For a vegetarian option, omit the chicken and add more vegetables like spinach, corn, or mushrooms.
  • You can make these ahead by assembling the quesadillas, covering them, and storing in the fridge before baking.
