- 8 small flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup cooked chicken, shredded (optional)
- 1/2 cup black beans, drained and rinsed (optional)
- 1/4 cup diced bell pepper
- 1/4 cup diced red onion
- 1 tablespoon olive oil or cooking spray
- Salt and pepper, to taste
- Optional toppings: sour cream, salsa, guacamole
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- Lay out four tortillas on the baking sheet. Sprinkle each with a layer of cheddar and mozzarella cheese, followed by optional fillings like chicken, black beans, bell pepper, and red onion. Top with another tortilla to create a sandwich.
- Brush the tops of the tortillas with olive oil or spray them with cooking spray. Season with a pinch of salt and pepper.
- Bake for 8–10 minutes, flipping halfway through, until the tortillas are golden and crispy and the cheese is melted.
- Remove from the oven, cut into wedges, and serve with your choice of sour cream, salsa, or guacamole.
Notes
- For a vegetarian option, omit the chicken and add more vegetables like spinach, corn, or mushrooms.
- You can make these ahead by assembling the quesadillas, covering them, and storing in the fridge before baking.
- For extra crunch, consider brushing the tortillas with a bit of butter instead of oil.
