  • 4 boneless, skinless chicken breasts (pounded thin)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 eggs, beaten
  • 2 tbsp olive oil (for frying)
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a shallow bowl, combine Parmesan, flour, garlic powder, paprika, salt, and pepper.
  2. Dip each chicken breast in beaten eggs, then dredge in the Parmesan mixture, pressing to coat.
  3. Heat olive oil in a skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
  4. In the same skillet, melt butter and sauté garlic for 30 seconds.
  5. Add chicken broth, lemon juice, and zest. Simmer for 2–3 minutes until slightly reduced.
  6. Return chicken to skillet, spoon sauce over the top, and cook for another minute.
  7. Garnish with parsley and serve with lemon wedges.

Notes

  • Serve over pasta, mashed potatoes, or rice to soak up the sauce.
  • For extra crispiness, place cooked chicken in a warm oven (250°F) while preparing the sauce.
  • You can swap Parmesan with Pecorino Romano for a stronger flavor.
