- 6 garlic cloves, minced
- 1 lemon, zested and juiced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 cup chicken broth
Instructions
- Preheat a cast iron skillet over medium-high heat and preheat oven to 400°F (200°C).
- Pat chicken thighs dry and season with salt, pepper, oregano, and lemon zest.
- Add olive oil to skillet and sear chicken skin-side down until golden, about 6–7 minutes.
- Flip chicken, add garlic, lemon juice, broth, and dot butter around the pan.
- Transfer skillet to oven and bake for 15–20 minutes until fully cooked through.
- Spoon sauce over chicken and sprinkle with fresh parsley before serving.
